Tasty science: instant ice cream

Let's cook! Ice cream is a colloidal emulsion. It contains milk fat mixed with water (frozen in this case), protein, sugar, and air. We are not going to use ice or put the mixture in the freezer because the key is to use the minimum amount of water possible and keep the air bubbles inside the mixture.
